Iron Out Smooth Cooking with Cast Iron Cookware

The farm families who own Cabot have created a recipe perfect for any occasion.  We are grateful to them for a healthy recipe with a new “wrinkle” on healthy eating.

Ingredients:

1 1/2 pounds boneless, skinless chicken breasts

4 cups water

1/2 cup chopped onion

2 cloves garlic, minced

1 tablespoon canola oil

4 cups reduced- sodium canned chicken broth

16 ounces fresh or frozen white corn

1 (10-ounce) can diced tomatoes with green chilies

Corn tortilla Chips

6 ounces 50% Reduced Fat Cheddar, grated (about 1 1/2 cups)

Preparation:

  1. In a cast iron sauce pan, combine chicken breasts and water. Bring to gentle simmer and cook just until set in center.
  2. Meanwhile, in a medium cast iron skillet

    over medium heat, combine onion, garlic, and oil; cook, stirring until onions are tender. Set aside.

  3. Transfer cooked chicken to plate to cool. Strain cooking liquid into another saucepan.enamel_saucepan_resized
  4. Add canned broth to cooking liquid and bring to simmer. Add corn and cook for 5 minutes. Add tomatoes and reserved onion mixture and cook until heated through.
  5. In each of eight large soup bowls, arrange about 8 tortilla chips. Shred cooled chicken and divide among bowls. Ladle hot soup over chips and chicken, top with grated cheese.

Take care of your car and it can last for many years. It can also save you bundles of money. Take care of your cast iron cookware and it will not only save you lots of money, you can pass it on to your children or grandchildren. William Jeanes in the July & August 2009 edition of AARP Magazine writes:

“With a little care, your car can last for decades-and save you thousands of dollars. The secret to automotive longevity turns out to be no secret at all: it’s maintenance.”

With cast iron cookware is is also true that the secret is there is no secret. Keep your cast iron cookware well-seasoned, which is not difficult, for you can purchase it pre-seasoned from the factory.

Cast Iron Cleaning & Maintenance

The pre-seasoned cast iron products as well as the colorful enamel cast iron need only to be rinsed out with warm water and a little dish washing soap to be ready for first use. Their non-stick surface cooks evenly and clean up is quick and easy. To clean and maintain your cast iron cookware rinse with hot water. A nylon scrubber and a little soap can be used if needed. Dry thoroughly before storing. Remember: keep your cast iron cookware dry; do not put cast iron cookware in the dishwasher; do not use detergents on your cast iron cookware and do not immerse hot cast iron cookware in cold water.

In our garage is a nine year old car (the average age of cars on US highways), an eight year old Harley Road King, in our kitchen a cast iron dutch oven that is over 5o years old. I do not plan to part with any of them. They are all “keepers“.

Lodge Logic Six Quart Pre – Seasoned Camp Dutch Oven

New Orleans Restoration Shrimp & Andouille Sausage Gumbo

Ingredients:
1/2 Cup Vegetable Oil
1/2 Cup All-Purpose Flour
4 Stalks Celery, chopped coarse
2 Medium Onions, chopped coarse
2 Green Bell Peppers; seeded, cored & chopped
2 Bay Leaves
2 tsp Salt
2 tsp Dried Oregano, crumble
1/2 tsp Cayenne
40 oz Clam Juice
28 oz Canned Plum Tomatoes, drained & chopped
1 lb Smoked Andouille Sausage, halved lengthwise & cut into 1/4″ slices
1/2 lb Okra, trimmed & cut crosswise into 1/4″ slices
2 lb Uncooked Medium Shrimp, peeled & de-veined
Cooked Long Grain Rice
2 Tomatoes, seeded & diced

Messin’ it up:
Heat the oil in a large Dutch oven over high heat until it is almost smoking.
Add the flour and cook, stirring, until dark reddish brown (about 8 minutes).
Add the Holy Trinity [celery, onions and bell peppers] all at once.
Cook 5 minutes, stirring – keep from sticking to the bottom of the pan.
Mix in the bay leaves, salt, oregano and cayenne.
Now add the clam juice, plum tomatoes and sausage.
Boil 15 minutes.
Add the okra and reduce heat.
Simmer until the okra is tender and
then add the shrimp.
Simmer until just cooked through (about 3 minutes).
Scoop the rice in each soup bowl and pour in the gumbo.
Garnish with diced tomato.
