Cast Iron Cookware Clearly Makes Good Sense

The wrestling matches between Pepper Gomez and Ray Stevens, during the early part of the 1960s set an unusual tone. Gomez, at the time, had the reputation of having a “cast iron” stomach. He constantly challenged other wrestlers to jump on his stomach. Gomez accepted a challenge from Ray Stevens to jump on his stomach off from a twelve foot ladder which was placed in the center of the ring. Stevens did so from the half way point on the ladder and then from the top of the ladder. Instead of jumping off feet first, he quickly switched to using his ” Bombs Away knee drop”. The impact caused Gomez to spit blood and put him out of action for several weeks.

The subject of this post is not to have people stomp on your stomach. Neither is this about Army chow or other dubious cooks you have known where you felt like you needed a “cast iron” stomach to digest and survive.

The true meaning, for me, of a “cast iron” stomach is to:

  1. benefit from meals cooked in cast iron cookware that “Allows you to taste the Food not the cookware”.
  2. enjoy the healthiest way to cook your meat and veggies. You can use a little olive or vegetable oil and not add additional fats to your food. The cleanup is easy for cast iron cookware well seasoned is the true non-stick cookware.

It is not often that we get something that is “just right”.

Like Goldilocks, we search constantly and this can even apply to the cookware we use.

Cast iron cookware has some amazing advantages . In my experience, this time-honored cookware is:

  • not too hot for it has even heat distribution and can even conserve energy.
  • not too cold for it has excellent heat retention. You can even take it to your table and serve from your cast iron casserole or skillet, particularly the attractive enameled cookware.
  • not too expensive compared to other cookware and it lasts for generations.
  • not difficult to maintain. When properly seasoned, it is the best non-stick cookware on the market.

Cast Iron Cookware Made This Just Right For Me

You may have been cooking with cast iron cookware for years. If so, you likely agree about its good qualities.

Eat to Help Protect Against Cancer. Cast Iron Cookware Can Help

Some helpful research tells us that there are a number of foods that can help protect us from the risk of cancer. (See Dave Grotto, RD, LDN, author of 101 Foods that Could Save Your Life). Here are 9.

Four of the nine are best prepared in your cast iron skillet, dutch oven or casserole.

  1. Beans. Use a cast iron dutch oven for the best and most delicious results. Canned beans are usually loaded with sodium. Use dried, frozen or visit your local farmer’s market. They are loaded with fiber, which helps to protect against colon and stomach cancer.
  2. Broccoli. Use a a cast iron skillet, or casserole. It is high in a phytochchemical called sulforaphane, which can help fight carcinogens, and is rich in the antioxidant indole-3-carbinol, which has proven to reduce the risk of breast cancer.
  3. Carrots. This veggie is high in antioxidants that have been associated with lowering the risk of bladder, cervix, prostate, colon, larynx and esophageal cancer, as well as postmenopausal breast cancer.  It is better if you will cook them in your cast iron pot or skillet and not raw. It seems that being cooked may allow for better absorption.

  4. Coffee. You may have a cast iron coffee pot for camping but your coffee maker at home will do just fine. Some studies suggest that one cup a day of coffee may help protect you from liver cancer.
  5. Red or Purple Grapes. They are totally full of resveratrol, also an antioxidant that has show a capacity to inhibit the growth of cancer cells (specifically breast, stomach, colon and leukemia).
  6. Yogurt. For a really tasty dish, dessert or snack, add your red grapes to plain non-fat yogurt and top with flax seed meal or Grape Nuts cereal. The yogurt will provide you with a rich source of probiotics, the “good bacteria” in your intestines that help to keep the “bad” bacteria in check, especially H pylori, which has been linked to esophageal and stomach cancer.
  7. Lemons. They contain a chemival group called limonoids, which have been shown to help protect against breast, lung, skin and colon cancer.
  8. Mushrooms. Certain mushrooms such as shitake, are loaded with betaglucans which stimulate the body’s production of cancer-fighting natural killer cells. Use your  cast iron fry pan or casserole to saute the mushrooms.
  9. Cranberries. They are high in an antioxidant that has been found to fight leukemia, breast, lung, and colon cancer cells.

Eat more plant based foods, no meat or less meat and discover how healthy and delicious your meals will be when prepared in these cast iron cookware products.

Sausage And Egg Casserole Is Simple to Prepare and Tastes Great Made In Cast Iron Cookware

Casseroles are marvelous for any one-dish meal and any meal of the day. A breakfast casserole is always a treat for family or guests and is easy to prepare and makes a tasty and healthy meal.

Here is what you need:

  • 6 slices bread, cubed. Whole wheat bread is good.
  • 1 pound sausage, browned, drained. Turkey sausage works well.
  • 1 1/2 cups shredded Cheddar cheese
  • 8  eggs, beaten. You can also use Egg Beaters for 1/2 this portion.
  • 2 cups milk, low fat or non-fat to stay healthy
  • 1 teaspoon, salt or a salt substitute
  • pepper to taste

Here Is How You Make It:

Cube bread and place evenly in lightly oiled casserole pan or you can use your cast iron dutch oven.

Sprinkle the sausage and cheese evenly. Mix eggs, milk, salt and pepper separately and pour over ingredients in your casserole pan.  Bake 45 minutes at 325 degrees or until set. Serve in squares.

A Singular Cast Iron Cookware Dish That You Will Want To Enjoy In The Plural

One day over lunch I asked a trivia question of a small group of friends: “Do you know what the singular of ‘tamales’ is?” I was quickly informed by one of the group that he really did not care. He stated the reason as being “I never eat anything in the singular”.

He was right. There are some things which you cannot eat just one of:

  • one peanut
  • one grit What is a “grit” anyway?
  • one kernel of popcorn
  • one “s’more” Where do you think they got the name?
  • one chip
  • one “tamal”  This is the answer to my question. It is the singular of tamales.

Here is a tasty dish you can make in your cast iron casserole or dutch oven.

Easy Tamale Pie Recipe

I love one-dish meals and especially casseroles.  This is a good one with spicy beef, sweet corn, and cheese sandwiched between layers of your corn bread. This tamale pie is easy to make, and uses Jiffy corn muffin mix if you want to speed things up.

Of course, this will also work perfectly with your favorite homemade cornbread recipe baked in a cast iron corn bread pan or cast iron skillet.

Ingredients:

  • 2 lbs ground beef (lean if you want to cook a healthful dish)
  • 2 cups diced peppers
  • 1 16-oz jar roasted tomato salsa
  • 1 tsp salt
  • 1 tsp chipotle pepper
  • 1/2 tsp dried oregano
  • 2 boxes Jiffy corn muffin/bread mix. Enough for your cast iron dutch oven or castiron casserole pan.
  • 2 eggs
  • 2/3 cup milk
  • 4 oz cheddar cheese, divided
  • 4 oz pepper jack cheese, divided
  • 8 oz frozen corn, thawed

Preparation:

Place a cast iron pan over medium heat, and add the beef and peppers. Using a wooden spoon, break up the meat into small pieces while it cooks. Once the meat is in small pieces, add the salsa, salt, chipotle, and oregano. Cook stirring occasionally for 15 minutes. Continue to break up any larger pieces of beef as it simmers. Remove from heat and reserve. Skim any residual fat that comes to the surface.

Lightly grease a 9 x 13 casserole pan or dutch oven. Mix up one of the boxes of Jiffy (or your own cornbread as the case may be) according to directions, and spread evenly in the bottom of the pan. Top with the corn, and then half the cheese. Spoon over the beef mixture evenly, and pressing down lightly.

Mix up the other box of Jiffy and fold in the remaining cheese. Spread evenly over the top, leaving a small space (1/2-inch) around the edges. Place the casserole pan or dutch oven in a preheated 350 degree F. oven. Bake for 1 hour. Allow to rest for 15 minutes before serving.

Why does cast iron cookware rock?

1. For one reason, rocks are used in the process of manufacturing cast iron cookware. Barbara and I recently toured the Lodge Foundry in South Pittsburg, Tennessee. The cookware is conveyed on a belt with rocks that knock off the rough edges. The rocks never wear out and neither does their cookware.
